- 1 lb cooked chicken (shredded or diced)
- 12 oz pasta (penne or rotini)
- 1 cup barbecue sauce
- 1 cup shredded sharp cheddar cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion, bell pepper, and minced garlic; sauté until softened (3-4 minutes).
- Stir in cooked chicken, barbecue sauce, chicken broth, and heavy cream; bring to a simmer.
- Add uncooked pasta and smoked paprika. Cover and cook until pasta is al dente (12-15 minutes), stirring occasionally.
- Once cooked, stir in shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste, then serve warm.
Notes
Garnish with chopped green onions or extra cheese. Pair with a green salad or garlic bread.
