Ingredients

  • 2 pounds bone-in chicken thighs or drumsticks
  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¾ cup BBQ sauce
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Optional parsley for garnish

Instructions

  1. Heat the oven to 400°F and line a sheet pan with parchment paper.
  2. Place the chicken and halved potatoes on the pan.
  3. Drizzle with olive oil and season with salt, pepper, garlic powder, and smoked paprika.
  4. Bake in the oven for 25 minutes.
  5. While it bakes, mix the BBQ sauce, honey, and apple cider vinegar in a bowl.
  6. Brush the BBQ sauce mixture onto the chicken.
  7. Return the pan to the oven and cook for an additional 10 to 15 minutes, until the chicken reaches an internal temperature of 165°F.
  8. Let the dish rest for 5 minutes before serving.

Notes

For extra crispy skin, broil the chicken for a few minutes at the end of cooking. Feel free to modify spices or try different marinades.
