- 1 lb cooked chicken (shredded or diced)
- 12 oz rotini or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup ranch dressing
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add the cooked chicken, smoked paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes until heated through.
- Pour in the chicken broth, heavy cream, and ranch dressing; stir to combine.
- Add uncooked pasta directly into the pot.
- Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer while stirring occasionally until the pasta is tender (about 10-12 minutes).
- Stir in both cheddar and mozzarella cheese until melted and creamy.
- Serve warm, garnished with fresh parsley or chives if desired.
Notes
Use rotisserie chicken for quicker prep time. Adjust spices to taste. Consider adding vegetables for more nutrition.
