Ingredients

  • 12 oz rotini or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add the cooked chicken, smoked paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes until heated through.
  2. Pour in the chicken broth, heavy cream, and ranch dressing; stir to combine.
  3. Add uncooked pasta directly into the pot.
  4. Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer while stirring occasionally until the pasta is tender (about 10-12 minutes).
  5. Stir in both cheddar and mozzarella cheese until melted and creamy.
  6. Serve warm, garnished with fresh parsley or chives if desired.

Notes

Use rotisserie chicken for quicker prep time. Adjust spices to taste. Consider adding vegetables for more nutrition.
