Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat some oil in a large pan over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Stir in the black beans, corn, tomatoes, chili powder, cumin, salt, and pepper.
  4. Add the cooked rice and mix everything together until heated through.
  5. Remove from heat and serve in bowls, topped with sliced avocado and fresh cilantro.
  6. Serve with lime wedges on the side.
