Ingredients

- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1 teaspoon Cajun seasoning
- 2 tablespoons chopped chives
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Hard boil the eggs by placing them in a pot, covering them with water, and bringing to a boil. Cook for 9-12 minutes.
- Remove the eggs from heat and let them cool in an ice bath.
- Once cool, peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl.
- Mash the yolks with mayonnaise, mustard, Cajun seasoning, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Top with chopped chives and a sprinkle of paprika.
- Serve chilled and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to two days. Garnish with extra chives and paprika for presentation.
