- 2 cups fresh spinach, chopped
- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup milk
- Salt and pepper to taste

Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped spinach, cottage cheese, and shredded cheese in a bowl.
- Whisk together the eggs, milk, salt, and pepper in another bowl.
- Pour the egg mixture over the spinach and cottage cheese mixture, stirring to combine.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes, or until the eggs are set and the top is golden.
- Let cool slightly before slicing and serving.
Notes
Feel free to add other vegetables or herbs for added flavor. To store leftovers, cover tightly and refrigerate for 3-4 days or freeze for longer storage.
