Ingredients

  • 1 lb cooked chicken, shredded or diced
  • 1 cup BBQ sauce
  • 1/2 cup honey
  • 12 oz pasta (penne or rotini)
  • 1/2 cup heavy cream
  • 1 cup sweet corn (canned or frozen)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion

Instructions

  1. Sauté diced onion and bell pepper in a large skillet over medium heat until softened (3-4 minutes).
  2. Add cooked chicken, BBQ sauce, honey, and chicken broth. Stir well and simmer for about 5 minutes.
  3. Stir in uncooked pasta. Cover and cook for 10-12 minutes or until pasta is tender.
  4. Mix in heavy cream, corn, and garlic powder. Season with salt and pepper to taste.
  5. Cook for an additional 2-3 minutes until heated through. Serve warm.

Notes

Serve warm and optionally sprinkle with fresh parsley or extra BBQ sauce. Pairs well with a side salad or garlic bread.
