- 1 pound chicken breast
- 2 cups cooked rice
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion, garlic, and diced bell pepper. Sauté until softened.
- Season the chicken breast with Cajun seasoning, salt, and pepper. Add the seasoned chicken to the skillet. Cook until browned.
- Pour in the chicken broth and let simmer for about 5 minutes.
- Stir in the heavy cream and cooked rice. Mix well until everything is combined.
- Allow to simmer for an additional 5-7 minutes until the sauce thickens.
- Garnish with green onions before serving.
Notes
Serve hot with garlic bread or a fresh salad. Adjust seasoning to taste.
