Ingredients

- 1 quart jar w/lid
- 1 bunch of celery
- 1–2 tsp salt
- 1 tsp dried red pepper flakes
- Vinegar
- Water
Instructions
- Rinse celery thoroughly, trim ends, and cut into 6-8 inch pieces. Slice lengthwise into thin spears.
- Pack celery spears snugly into a quart jar without crushing.
- Pour vinegar until jar is three-quarters full, then top with water.
- Add 1-2 tsp salt and 1 tsp dried red pepper flakes. Seal and gently shake.
- Refrigerate overnight. Enjoy the next day and consume within one week for best crispness.
Notes
For added flavor, mix in spices such as garlic powder or dill. Adjust red pepper flakes according to heat preference.
