Ingredients

  • 3 ounces strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup chopped fresh strawberries
  • 1 cup crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup cottage cheese
  • 1 cup whipped topping

Instructions

  1. Whisk the gelatin with boiling water for about 2 minutes until it fully dissolves.
  2. Add the cold water and stir until combined.
  3. Cool the mixture for 10 minutes, making sure it’s no longer hot.
  4. Stir in the chopped strawberries and drained pineapple.
  5. Add the mini marshmallows and mix gently.
  6. Chill the mixture for 25 to 30 minutes until it thickens but does not set.
  7. Fold in the cottage cheese gently until well mixed.
  8. Fold in the whipped topping until the mixture is uniform.
  9. Transfer to a serving dish, cover, and chill for at least 3 hours until set.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed within the first couple of days.
