- 3 ounces strawberry gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup chopped fresh strawberries
- 1 cup crushed pineapple, drained
- 1 cup mini marshmallows
- 1 cup cottage cheese
- 1 cup whipped topping
Instructions
- Whisk the gelatin with boiling water for about 2 minutes until it fully dissolves.
- Add the cold water and stir until combined.
- Cool the mixture for 10 minutes, making sure it’s no longer hot.
- Stir in the chopped strawberries and drained pineapple.
- Add the mini marshmallows and mix gently.
- Chill the mixture for 25 to 30 minutes until it thickens but does not set.
- Fold in the cottage cheese gently until well mixed.
- Fold in the whipped topping until the mixture is uniform.
- Transfer to a serving dish, cover, and chill for at least 3 hours until set.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed within the first couple of days.
