Ingredients

  • 1 cup granulated sugar

  • 1/2 cup pureed strawberries
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Additional strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the milk, pureed strawberries, and vanilla extract.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cupcakes to cool completely.
  9. Whip the heavy cream and powdered sugar in a bowl until stiff peaks form for the frosting.
  10. Frost the cooled cupcakes and garnish with additional strawberries.

Notes

Use fresh strawberries for the best flavor. If they are out of season, frozen strawberries can work too.
