- 2 tablespoons Olive Oil
- 1 medium Onion
- 2 medium Jalapeños
- 4 cloves Garlic
- 1 pound Ground Chicken
- 1 cup Corn Kernels
- 2 tablespoons Chili Powder
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 4 cups Chicken Broth
- 1 cup Sour Cream
- 2 tablespoons Fresh Lime Juice
- 1/4 cup Cilantro
- Hot Sauce
- 1/2 cup Cotija Cheese
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until it’s soft and golden brown.
- Stir in the jalapeños and garlic. Sauté for another minute until fragrant.
- Add the ground chicken and cook until it’s browned and fully cooked through.
- Mix in the corn, chili powder, paprika, cumin, salt, and pepper. Stir to combine.
- Pour in the chicken broth and bring the mixture to a boil. Lower the heat and let it simmer for about 20 minutes.
- Once simmered, stir in the sour cream and lime juice. Adjust seasoning if needed.
- Serve warm, topped with cilantro, cotija cheese, and hot sauce if desired.
Notes
For spice adjustments, use different peppers or alter the chili powder amount. For added thickness, mash some beans or add cornstarch.
