Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine (for rolling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the feta cheese, spinach, and minced garlic. Season with salt and pepper.
  3. Flatten the chicken breasts using a meat mallet to about 1/2 inch thick.
  4. Spoon the spinach and feta mixture onto each chicken breast and roll them up tightly. Secure with toothpicks or kitchen twine.
  5. Heat olive oil in a skillet over medium heat and sear each chicken roll until golden brown on all sides, about 5 minutes.
  6. Transfer the chicken rolls to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  7. Remove from the oven, let rest for a few minutes, then remove toothpicks or twine, slice, and serve.
