- 4 boneless, skinless chicken breasts
- 1 cup feta cheese, crumbled
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- Toothpicks or kitchen twine (for rolling)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together the feta cheese, spinach, and minced garlic. Season with salt and pepper.
- Flatten the chicken breasts using a meat mallet to about 1/2 inch thick.
- Spoon the spinach and feta mixture onto each chicken breast and roll them up tightly. Secure with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium heat and sear each chicken roll until golden brown on all sides, about 5 minutes.
- Transfer the chicken rolls to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
- Remove from the oven, let rest for a few minutes, then remove toothpicks or twine, slice, and serve.
Notes
Ensure you flatten the chicken breasts evenly for even cooking. Feel free to add herbs like oregano or basil for extra flavor.
