Ingredients

  • Small pumpkins
  • Ground meat (beef, turkey, or sausage)
  • Onion, chopped
  • Garlic, minced
  • Cooked rice or quinoa
  • Cheese (mozzarella, cheddar, or your choice)
  • Fresh herbs (like thyme, rosemary, or parsley)
  • Spices (salt, pepper, paprika, etc.)
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the small pumpkins and scoop out the seeds.
  3. Heat olive oil in a skillet and sauté the onion and garlic until soft.
  4. Add the ground meat and cook until browned.
  5. Stir in cooked rice or quinoa, cheese, fresh herbs, and spices until well combined.
  6. Stuff each pumpkin with the meat mixture.
  7. Place the stuffed pumpkins in a baking dish and add a little water to the bottom.
  8. Cover with foil and bake for 30-40 minutes, until the pumpkins are tender.
  9. Remove foil and bake for an additional 10 minutes to brown the tops.
  10. Serve warm.
