Ingredients

  • 1 cup crushed pineapple (drained)
  • 1 1/2 cups sweetened shredded coconut (plus extra for rolling)
  • 1/4 cup sweetened condensed milk
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the drained crushed pineapple, 1 1/2 cups of shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt in a medium mixing bowl.
  2. Stir until the mixture is evenly combined.
  3. Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes.
  4. Scoop about a tablespoon of the mixture at a time and roll it into small balls using your hands.
  5. Roll each pineapple ball in extra shredded coconut until they’re fully coated.
  6. Refrigerate the tray of pineapple coconut balls for another 30 minutes to let them firm up completely before serving.

Notes

Make sure to drain the crushed pineapple well to avoid excess moisture. You can add nuts or chocolate chips for a crunch.
