- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 cup mashed sweet potatoes
- 1/2 cup milk
- 1/2 cup butter, melted
- 1/4 cup additional butter for swimming
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, mix the mashed sweet potatoes and milk until smooth.
- Pour the sweet potato mixture into the dry ingredients and stir until just combined.
- Fold in the melted butter until the dough is smooth.
- Pour the additional melted butter into a baking dish.
- Spoon the biscuit dough into the dish, evenly over the butter.
- Bake for 25-30 minutes, or until the tops are golden brown and the biscuits are fluffy.
- Serve warm, enjoying the buttery flavor!
Notes
Serve warm with butter or honey. Best enjoyed fresh but can be stored.
