Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup mashed sweet potatoes
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1/4 cup additional butter for swimming

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl, mix the mashed sweet potatoes and milk until smooth.
  4. Pour the sweet potato mixture into the dry ingredients and stir until just combined.
  5. Fold in the melted butter until the dough is smooth.
  6. Pour the additional melted butter into a baking dish.
  7. Spoon the biscuit dough into the dish, evenly over the butter.
  8. Bake for 25-30 minutes, or until the tops are golden brown and the biscuits are fluffy.
