- 2 cups ube cake mix
- 1 cup milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup sugar
- 2 tbsp water
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1/2 cup cream cheese
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a round baking pan.
- Combine ube cake mix, milk, vegetable oil, and eggs in a mixing bowl. Mix until smooth.
- Pour the batter into the prepared pan.
- Combine the sugar and water in a separate bowl. Cook over medium heat until the sugar dissolves and turns golden brown. Pour this caramel into another round baking pan.
- Blend the condensed milk, evaporated milk, cream cheese, vanilla extract, and salt in a blender until smooth.
- Carefully pour the flan mixture over the caramel in the second baking pan.
- Place the pan with the cake batter on top of the flan pan in a larger baking dish filled with water.
- Bake for 45-50 minutes or until the cake is set.
- Allow it to cool, then invert the flan pan onto a serving plate.
- Serve chilled and enjoy your ube leche flan cake!
Notes
Store leftovers in the refrigerator for 3-5 days or freeze for later use. Ensure ingredients are at room temperature for better mixing.
