- 2 pounds of potatoes (Yukon Gold or Russet)
- 4 tablespoons of olive oil
- Salt to taste
- Black pepper to taste
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the potatoes (if desired) and cut them into evenly-sized chunks.
- Place the potatoes in a pot of cold water, add salt, and bring to a boil. Cook for about 10 minutes until just tender, then drain.
- Shake the potatoes in the pot to roughen them up a bit.
- In a large baking sheet, toss the potatoes with olive oil, salt, and pepper until well coated.
- Spread them out in a single layer.
- Roast in the preheated oven for 30-40 minutes, flipping halfway through, until golden and crispy.
- Remove and garnish with fresh herbs before serving.
Notes
For added flavor, serve with a dipping sauce like ketchup or garlic aioli.
