A delicious plant-based alternative to traditional salami, perfect for sandwiches and antipasto boards.

  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup lentils
  • 1 cup vital wheat gluten
  • 2 tablespoons smoked paprika
  • 2 cloves garlic, minced
  • 1 teaspoon fennel seeds
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce

Instructions

  1. Cook lentils according to package instructions until tender. Drain and let cool.
  2. In a large bowl, combine cooked lentils with vital wheat gluten, smoked paprika, garlic, fennel seeds, onion powder, black pepper, and salt. Mix well.
  3. Stir in vegetable broth and soy sauce until a dough forms.
  4. Shape the dough into a log and wrap tightly in foil.
  5. Steam the log for 30-40 minutes, ensuring it is cooked through.
  6. Allow the salami to cool, then refrigerate overnight to enhance the flavor.
  7. Slice and serve on sandwiches, antipasto boards, or with crackers and vegan cheese.

Notes

For a spicier salami, consider adding cayenne pepper or chili flakes. You can also experiment with different spices to customize the flavor.
