Instructions
- Cook lentils according to package instructions until tender. Drain and let cool.
- In a large bowl, combine cooked lentils with vital wheat gluten, smoked paprika, garlic, fennel seeds, onion powder, black pepper, and salt. Mix well.
- Stir in vegetable broth and soy sauce until a dough forms.
- Shape the dough into a log and wrap tightly in foil.
- Steam the log for 30-40 minutes, ensuring it is cooked through.
- Allow the salami to cool, then refrigerate overnight to enhance the flavor.
- Slice and serve on sandwiches, antipasto boards, or with crackers and vegan cheese.
Notes
For a spicier salami, consider adding cayenne pepper or chili flakes. You can also experiment with different spices to customize the flavor.
