Ingredients

  • 3 cups watermelon, cubed (preferably seedless)
  • 1 unit cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Start by preparing the watermelon. Cut the watermelon into small cubes and place it in a large bowl.
  2. Next, dice the cucumber and add it to the bowl with the watermelon.
  3. Crumble the feta cheese and sprinkle it over the top of the watermelon and cucumber.
  4. Add the thinly sliced red onion and chopped mint leaves to the salad.
  5. Squeeze the juice of one lime over the salad. Mix everything gently so that you do not crush the watermelon.
  6. Season with salt and pepper to taste, but remember that feta cheese is already salty, so use sparingly.

Notes

Serve chilled for the best flavor and store leftovers in an airtight container. Best eaten within two days.
