  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, cottage cheese, white beans, chicken broth, corn, diced onion, minced garlic, chili powder, cumin, salt, and pepper in a large mixing bowl. Mix well until combined.
  3. Pour the mixture into a greased baking dish.
  4. Sprinkle the shredded cheese on top if using.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is bubbly.
  6. Serve warm, garnished with fresh cilantro or green onions if desired.

Notes

For a creamier dish, increase the cottage cheese or add cream cheese. Use rotisserie chicken to save time on preparation.
