- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 can white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional for topping)
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, cottage cheese, white beans, chicken broth, corn, diced onion, minced garlic, chili powder, cumin, salt, and pepper in a large mixing bowl. Mix well until combined.
- Pour the mixture into a greased baking dish.
- Sprinkle the shredded cheese on top if using.
- Bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is bubbly.
- Serve warm, garnished with fresh cilantro or green onions if desired.
Notes
For a creamier dish, increase the cottage cheese or add cream cheese. Use rotisserie chicken to save time on preparation.
