Ingredients

- 2 large sweet potatoes
- 1 lb ground beef (or ground turkey/vegan beef)
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp chili flakes
- 1/4 cup hot honey
- Salt and pepper to taste
- Crumbled goat cheese (optional)
- Fresh herbs (optional)
- Creamy avocado (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the sweet potatoes in half lengthwise and scoop out a bit of the flesh to make room for the filling.
- Place sweet potato halves on a baking sheet and roast in the oven for about 25-30 minutes until tender.
- In a skillet, heat some oil over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon.
- Add minced garlic, paprika, chili flakes, salt, and pepper to the skillet. Cook for 1-2 minutes until fragrant.
- Drizzle hot honey into the beef mixture, stirring to combine.
- Once the sweet potatoes are done, fill each half with the hot honey beef mixture.
- Top with crumbled goat cheese, fresh herbs, or avocado if desired.
- Serve immediately and enjoy your zesty meal!
Notes
Store leftovers in an airtight container in the fridge for up to three days. To reheat, pop them in the oven or microwave until heated through.
